Camping recipes: Chocolate, maple syrup and banana cake

This recipe hails from my two mates’ home, Thursday Island, in the Torres Strait. They made it for our crew one day. So delicious.

Ingredients

• 125g butter

• 1 cup white sugar

• 2 eggs, beaten

• 3 ripe bananas

• 1 tsp vanilla essence

• ½ cup maple syrup

• ½ cup choc dots (cooking chocolate)

• 1½ cups self-raising flour

• 2 tbsp milk

• ½ tsp bicarb soda

Method

Preheat oven to 190°C. Cream butter and sugar in a bowl until it turns a light colour. Gradually add beaten eggs one at a time.

Mash banana on a plate with vanilla essence, and maple syrup. Mix bicarb soda in a cup with the milk.

Add your mashed banana mixture and chocolate into the creamed butter and sugar and mix until combined.

Alternately add your flour and your milk mix until just combined.

Pour mixture into a greased and lined loaf tin and bake for 45 minutes or until cake springs back from a touch in the middle.
