Camping Recipes: Cabbage And Bacon Soup

Ingredients

• 4 rashers streaky bacon, chopped roughly

• 1 onion, diced

• 4 cloves garlic, minced

• 500g minced beef

• 250g minced pork

• ¾ cup basmati rice, uncooked

• 2 tbsp tomato paste

• ½ tsp, chilli flakes

• 1 tsp smoked paprika

• 1 small cabbage, chopped into large chunks

• 400g can diced tomatoes

• 2 tbsp Worcestershire sauce

• 2 tbsp Red Wine Vinegar

• 1L beef stock

• 1 tbsp mixed herbs

• Salt and pepper to taste

Method

Heat a pot over high heat and add the chopped bacon and cook until browned.

Add the diced onion and cook for three minutes

Add minced garlic, ground beef, pork and rice and cook until the meat is mostly cooked.

Add the tomato paste, chilli flakes, paprika, and cabbage and combine all the ingredients, stirring until the cabbage begins to wilt.

Add the diced tomatoes, Worcestershire sauce, beef stock, herbs and salt and pepper and bring to the boil, stirring until combined.

Simmer for 30 minutes and serve with crusty bread.
